Loaded Potato Quiche - all the flavors of a loaded baked potato in quiche form! Perfect for breakfast, brunch, lunch, and dinner. Diced potatoes, bacon, cheddar cheese, green onions, eggs, milk, and sour cream. SO easy and SOOO delicious! I usually double the recipe and never have any leftovers. You can make it ahead and freeze it unbaked for a quick meal later.
Place the cooked diced potatoes in the bottom of a deep-dish pie crust. Sprinkle with shredded cheddar cheese, bacon crumbles, and green onions.
In a bowl, whisk together eggs, whole milk, garlic powder, and sour cream. Season with salt and black pepper.
Pour the egg mixture into the pie crust.
Bake for 45 to 55 minutes, until a toothpick or knife inserted into the middle of the quiche comes out clean or with a few crumbs.
Notes:
There is no need to thaw or prebake the frozen pie crust before filling and baking.
To quickly thaw the potatoes, microwave them for 30 seconds before adding them to the quiche.
Cover the edges of the pie crust with foil if they start to get too brown.
Can Quiche be made in advance? Yes! You can assemble the quiche ahead of time and refrigerate it overnight.
Can Homemade Quiche be frozen? Yes! You can make this quiche ahead of time and freeze it baked or unbaked for later.
I prefer to freeze the quiche unbaked. Assemble the quiche and place it in the freezer. Once the quiche is frozen place it in a freezer bag. When ready to bake, thaw the quiche in the refrigerator before baking as directed below.
To freeze the baked quiche, cool to room temperature and wrap the pie dish with plastic wrap and aluminum foil. When ready to reheat, thaw and reheat in the oven or microwave before serving.
How long will Homemade Quiche last? The quiche will keep 3 to 4 days covered in the refrigerator.
Store leftovers in airtight plastic containers in the refrigerator.
